Maple spare ribs

  • 1 kg (2lb) spare ribs
  • 2 cups maple syrup
  • 2 tbsp ginger, chopped
  • ¼ c soy sauce
  • 2 cloves garlic, minced
  • ¼ c sesame oil
  • Tabasco sauce or crushed red chilli peppers, to taste


In a pot filled with cold salted water, simmer ribs for 45 minutes. Set aside. In another pot, mix the syrup with the ginger, soy sauce, garlic, sesame oil and the Tabasco sauce (or chilli) and simmer for 5 minutes. Preheat the barbeque on high heat. Drain the ribs and braise with the maple sauce. Reduce barbeque heat to low and grill the ribs for 6 minutes each side.
