Organic bayou ribs

Ingredients :

  • 3 cups tomato sauce (750 ml)
  • 1/2 cup brown rum (125 ml)
  • 1/2 cup water (125 ml)
  • 6 tablespoons brown sugar (90 ml)
  • 1/2 1 tsp. dried hot pepper flakes (allspice) to taste (2-5 ml. to taste)
  • 1/2 tbsp ground allspice (7 mL)

To taste: salt

4 pieces of 4 pork back ribs

2 tbsp. chopped fresh cilantro (or fresh parsley) (30 ml)


In a large saucepan, combine tomato sauce, rum, water, brown sugar, hot pepper, allspice and salt to taste. Bring to a boil, add the ribs, cover and simmer over low heat for 45 minutes. Drain the ribs and reserve the sauce. Under the preheated broiler, grill the ribs for 3 to 4 minutes on each side, brushing them often with the reserved sauce. Remove from the heat and sprinkle with chopped cilantro before serving.
