Maple pork tenderloin

Ingredients :
- ½ cup (125 ml) maple syrup
- 2 tbsp (30 ml) molasses
- 1 tbsp (15 ml) dijon mustard
- 1 cup (250 ml) chicken broth
- Salt and pepper
- 1 pork tenderloin of 700 g
- 1 tbsp (15 ml) canola oil
- 3 tbsp (45 ml) dried shallots
- 1 tbsp (15 ml) flour
Preparation
In a bowl, whisk maple syrup with molasses, mustard and broth. Season with salt and pepper. In a skillet, heat the oil over medium heat. Sear the pork tenderloin on all sides. Transfer to a plate and cook the shallots in the same pan for 1 minute. Sprinkle with flour and stir. Pour the maple syrup mixture and return the pork tenderloin to the pan or put it in the oven at 350C. Cover and cook for 20 to 25 minutes. Transfer the pork tenderloin to a plate. Cover with aluminum foil and let stand for 8 to 10 minutes before slicing.
