This roast is available with or without bones. For maximum flavour, we prefer the bone-in cut. For this roast, cook slowly over medium or low heat to reveal all its tenderness. We also like it braised, roasted, grilled, casserole and especially slow-cooked in an aromatic liquid (wine, beer, broth, etc.). Simmer for a long time at 170°C (325°F) until it breaks with a fork.
