The dried sausage is flavored with salt, pepper , nutmeg , garlic and brandy. During the drying process which lasts mostly four weeks, microorganisms grow. It is during this stage that the sausage develops its organoleptic characteristics. The natural flora consists mainly of Penicillium fungus which grow on the surface of the product while drying. The sausage comes in several flavors :pepper , hazelnut, marinated seaweed , or cheese. Sausages are lovingly made for any occasion.
